If you’ve been hitting Hollinger Park this week, then you’ll know there are plenty of food options available.

But none seems more popular than the ribs at Big M’s Smokin’ Bones Ribs.

The Owner of Big M’s is Brad McCloud, from London, Ontario, but originally from Missouri. He’s traveled around North America with his staff, competing in rib contests, and bringing people the best ribs they’ll ever have.

“We compete anywhere from Quebec, all the way out to B.C,” McCloud said. “We travel all year round. We go down South, compete in the States a little bit. Mostly up here; we do 23 shows a summer. Started May 2-4, and we go right to October.”

The food stand has an enthusiastic staff, drawing in lineups of hungry festival goers every night. McCloud, says when it comes to why the ribs are so addictive, the secret is in the sauce.

“We use all our own made sauce,” McCloud said. “Secrets everywhere, we don’t tell anybody about that. We use all our own homemade rubs; all apple-wood, smoked. Everything is cooked on apple-wood. That’s what separates us from everybody else.”
